- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add minced garlic and sliced mushrooms, sauté until mushrooms are tender.
- Stir in the orzo and cook for 1-2 minutes.
- Add vegetable broth and bring to a boil.
- Reduce heat and simmer until orzo is cooked, about 10 minutes.
- Stir in fresh spinach and heavy cream, cooking until spinach is wilted.
- Mix in grated Parmesan cheese and season with salt and pepper.
- Serve warm and enjoy!
Notes
- For a vegan version, substitute heavy cream with coconut cream and omit Parmesan cheese.
