Ingredients

  • 1 lb shrimp, peeled and deveined
  • 8 corn tortillas
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 can (10 oz) enchilada sauce
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add shrimp, cumin, salt, and pepper; cook until shrimp are pink and cooked through.
  4. In a bowl, mix sour cream and half of the enchilada sauce.
  5. Fill each tortilla with shrimp mixture, roll them up, and place in a baking dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with cheese.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
