- 1 lb shrimp, peeled and deveined
- 8 corn tortillas
- 1 cup sour cream
- 1 cup shredded cheese
- 1 can (10 oz) enchilada sauce
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
- Add shrimp, cumin, salt, and pepper; cook until shrimp are pink and cooked through.
- In a bowl, mix sour cream and half of the enchilada sauce.
- Fill each tortilla with shrimp mixture, roll them up, and place in a baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Serve hot and enjoy!
