Ingredients

- 2 cups cooked chicken, shredded
- 1 cup uncooked rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup ranch dressing
- 2 cups chicken broth
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup frozen mixed vegetables
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, uncooked rice, cream of chicken soup, ranch dressing, chicken broth, garlic powder, onion powder, salt, and pepper.
- Add the frozen mixed vegetables and mix well.
- Pour the mixture into a greased 9×13 inch baking dish.
- Cover with aluminum foil and bake for 45 minutes.
- Remove the foil, sprinkle shredded cheese on top, and bake for an additional 15 minutes or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños or hot sauce.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- Leftovers can be stored in an airtight container for up to 3 days.
