- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 1/2 cup ricotta cheese
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup mozzarella cheese, shredded
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, basil, garlic, ricotta cheese, egg, salt, and pepper.
- Mix until well combined.
- Fold in the sun-dried tomatoes and mozzarella cheese.
- Transfer the mixture to a loaf pan and shape it into a loaf.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before slicing and serving.
Notes
- For added flavor, consider adding Italian seasoning.
- Serve with a side of vegetables or a salad.
- Leftovers can be stored in the refrigerator for up to 3 days.
