Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1/2 cup ricotta cheese
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, basil, garlic, ricotta cheese, egg, salt, and pepper.
  3. Mix until well combined.
  4. Fold in the sun-dried tomatoes and mozzarella cheese.
  5. Transfer the mixture to a loaf pan and shape it into a loaf.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
