Description

A comforting dish of soft gnocchi coated in a rich creamy sauce with crispy chorizo and fresh spinach, perfect for gatherings or weeknight meals.


Ingredients

  • 1 lb Gnocchi
  • 8 oz Chorizo Sausage, sliced
  • 1 cup Heavy Cream
  • 2 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • ½ cup Parmesan Cheese, grated
  • 2 cups Spinach, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Bring a large pot of salted water to a gentle boil. Add the gnocchi and cook according to package instructions. Once they float, drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the chorizo and cook until browned, about 5-6 minutes.
  3. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Lower the heat slightly and pour in the heavy cream, stirring gently until it forms a luscious sauce.
  5. Combine the cooked gnocchi and chopped spinach into the skillet, stirring until the spinach wilts and everything is heated through.
  6. Taste and season with salt and pepper as desired.
  7. Serve in bowls, topped with grated Parmesan cheese.

Notes

Make-ahead tips: Prepare the chorizo and cream base ahead of time. Reheat and add freshly cooked gnocchi and spinach before serving.
