- 1 lb Gnocchi
- 8 oz Chorizo Sausage, sliced
- 1 cup Heavy Cream
- 2 cloves Garlic, minced
- 2 tbsp Olive Oil
- ½ cup Parmesan Cheese, grated
- 2 cups Spinach, chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Bring a large pot of salted water to a gentle boil. Add the gnocchi and cook according to package instructions. Once they float, drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the chorizo and cook until browned, about 5-6 minutes.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Lower the heat slightly and pour in the heavy cream, stirring gently until it forms a luscious sauce.
- Combine the cooked gnocchi and chopped spinach into the skillet, stirring until the spinach wilts and everything is heated through.
- Taste and season with salt and pepper as desired.
- Serve in bowls, topped with grated Parmesan cheese.
Notes
Make-ahead tips: Prepare the chorizo and cream base ahead of time. Reheat and add freshly cooked gnocchi and spinach before serving.
