- 8 oz fettuccine pasta
- 2 chicken breasts, sliced
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the fettuccine pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Season the sliced chicken breasts with Cajun seasoning and cook in the skillet until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add chicken broth and bring to a simmer.
- Stir in heavy cream, lemon juice, and lemon zest; cook for 2-3 minutes until slightly thickened.
- Add the cooked pasta and chicken back to the skillet; toss to combine.
- Stir in grated Parmesan cheese and season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a spicier dish, add more Cajun seasoning.
- Can substitute fettuccine with any pasta of your choice.
- Leftovers can be stored in the refrigerator for up to 3 days.
