A delicious and unique casserole combining sweet potatoes, cranberries, and walnuts for a perfect holiday side dish.

- 4 cups sweet potatoes, peeled and cubed
- 1 cup fresh cranberries
- 1 cup walnuts, chopped
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup butter, melted
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Boil sweet potatoes in a large pot until tender, about 15-20 minutes.
- Drain and mash the sweet potatoes in a large bowl.
- Add cranberries, walnuts, brown sugar, maple syrup, cinnamon, nutmeg, melted butter, and salt to the mashed sweet potatoes.
- Mix well until all ingredients are combined.
- Transfer the mixture to a greased baking dish.
- Bake in the preheated oven for 30-35 minutes, or until heated through and slightly golden on top.
Notes
- For a vegan version, substitute butter with coconut oil.
- Can be prepared a day in advance and baked before serving.
- Adjust the sweetness by adding more or less brown sugar based on preference.
