A delicious and unique casserole combining sweet potatoes, cranberries, and walnuts for a perfect holiday side dish.


Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1 cup fresh cranberries
  • 1 cup walnuts, chopped
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup butter, melted
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil sweet potatoes in a large pot until tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Add cranberries, walnuts, brown sugar, maple syrup, cinnamon, nutmeg, melted butter, and salt to the mashed sweet potatoes.
  5. Mix well until all ingredients are combined.
  6. Transfer the mixture to a greased baking dish.
  7. Bake in the preheated oven for 30-35 minutes, or until heated through and slightly golden on top.

Notes

  • For a vegan version, substitute butter with coconut oil.
  • Can be prepared a day in advance and baked before serving.
  • Adjust the sweetness by adding more or less brown sugar based on preference.
