  • 1 cup fresh cranberries
  • 1 cup pecans, chopped
  • 1 cup bread crumbs
  • 1/2 cup onion, diced
  • 1/4 cup celery, diced
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté onion and celery until soft.
  3. In a large bowl, combine cranberries, pecans, bread crumbs, sautéed vegetables, parsley, salt, pepper, and thyme.
  4. Stuff the turkey breast with the cranberry pecan mixture and secure with kitchen twine.
  5. Place the stuffed turkey breast in a roasting pan.
  6. In a small bowl, mix orange juice and honey, then brush over the turkey.
  7. Roast in the preheated oven for about 1.5 hours or until the internal temperature reaches 165°F (74°C).
