- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1/2 cup orange juice
- 1/4 cup honey
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil and sauté onion and celery until soft.
- In a large bowl, combine cranberries, pecans, bread crumbs, sautéed vegetables, parsley, salt, pepper, and thyme.
- Stuff the turkey breast with the cranberry pecan mixture and secure with kitchen twine.
- Place the stuffed turkey breast in a roasting pan.
- In a small bowl, mix orange juice and honey, then brush over the turkey.
- Roast in the preheated oven for about 1.5 hours or until the internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before slicing and serving.
