Ingredients

- 2 cups cooked chicken, shredded
- 1 cup fresh cranberries
- 1 apple, diced
- 1/2 cup celery, chopped
- 1/4 cup walnuts, chopped
- 1/2 cup Greek yogurt
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, cranberries, diced apple, celery, and walnuts.
- In a separate bowl, mix together the Greek yogurt, honey, lemon juice, salt, and pepper.
- Pour the yogurt mixture over the chicken mixture and stir until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve on a bed of greens or in a sandwich.
Notes
- For a vegan option, substitute chicken with chickpeas.
- Adjust the sweetness by adding more or less honey.
- This salad can be made a day in advance for convenience.
