Instructions
- Preheat the oven: Set the oven to 350°F (175°C) and line your muffin tin with paper liners.
- Mix the dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Combine the wet ingredients: In another bowl, mix melted butter, eggs, milk, and vanilla extract.
- Incorporate the wet and dry ingredients: Gently combine until just blended; avoid overmixing.
- Add the strawberries: Fold in chopped strawberries without breaking them.
- Prepare the cream cheese filling: Blend cream cheese, powdered sugar, and lemon juice until smooth.
- Fill the muffin tins: Spoon batter halfway, add cream cheese mixture, then top with more batter.
- Bake them: Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool and enjoy: Let cool slightly before serving.
Notes
These muffins can be made ahead and stored in the fridge. You can also use frozen strawberries if fresh ones are unavailable.
