Description

A comforting dish featuring tender chicken atop creamy cottage cheese, enveloped in tangy marinara sauce and baked to perfection with crispy breadcrumbs.


Ingredients

  • 2 Chicken Breasts, pounded evenly
  • 1 cup Cottage Cheese
  • 1 cup Marinara Sauce, divided
  • 1 cup Breadcrumbs, preferably panko
  • 1/2 cup Parmesan Cheese, grated
  • Olive Oil for sautéing
  • Salt and Pepper to taste
  • Italian Herbs to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your chicken by pounding it to an even thickness and seasoning it.
  3. Sauté the chicken in a non-stick skillet with olive oil for about 5 minutes on each side.
  4. Mix the cottage cheese with half of the marinara sauce and a pinch of salt and pepper.
  5. Assemble the dish by spreading the cottage cheese mixture in a baking dish and placing the chicken on top.
  6. Ladle the remaining marinara sauce over the chicken.
  7. Sprinkle the breadcrumbs and parmesan cheese on top.
  8. Bake for 20-25 minutes until chicken reaches 165°F (74°C).
  9. Garnish with fresh basil and serve hot.

Notes

For a quicker cook time, consider using an air fryer at 375°F (190°C) for about 10-12 minutes.
