Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a Dutch oven over medium heat.
  2. Add diced onion and garlic, sauté until softened.
  3. Add diced potatoes and stir to combine.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  6. Stir in heavy cream and Cajun seasoning, and season with salt and pepper.
  7. Blend the soup until smooth, if desired, or leave it chunky.
  8. Serve hot, garnished with sliced green onions.
