Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- Heat olive oil in a Dutch oven over medium heat.
- Add diced onion and garlic, sauté until softened.
- Add diced potatoes and stir to combine.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in heavy cream and Cajun seasoning, and season with salt and pepper.
- Blend the soup until smooth, if desired, or leave it chunky.
- Serve hot, garnished with sliced green onions.
Notes
- For a spicier soup, add more Cajun seasoning or diced jalapeños.
- This soup can be made ahead of time and reheated.
