Description
A delicious and healthy dish featuring salmon marinated in citrus herbs, served over a bed of brown rice.
Ingredients

- 2 salmon fillets
- 1 cup brown rice
- 1 lemon, juiced
- 1 lime, juiced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh dill, chopped
- 1 teaspoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix lemon juice, lime juice, olive oil, garlic, dill, parsley, salt, and pepper.
- Marinate the salmon fillets in the citrus herb mixture for at least 30 minutes.
- While the salmon is marinating, cook the brown rice according to package instructions.
- Place the marinated salmon on a baking sheet and bake for 15-20 minutes or until cooked through.
- Serve the salmon over a bed of brown rice and drizzle with any remaining marinade.
Notes
- For added flavor, consider adding a pinch of red pepper flakes to the marinade.
- This dish pairs well with steamed vegetables.
- Leftovers can be stored in the refrigerator for up to 2 days.
