Description

Ingredients

  • 2 salmon fillets
  • 1 cup brown rice
  • 1 lemon, juiced
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh dill, chopped
  • 1 teaspoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix lemon juice, lime juice, olive oil, garlic, dill, parsley, salt, and pepper.
  3. Marinate the salmon fillets in the citrus herb mixture for at least 30 minutes.
  4. While the salmon is marinating, cook the brown rice according to package instructions.
  5. Place the marinated salmon on a baking sheet and bake for 15-20 minutes or until cooked through.
  6. Serve the salmon over a bed of brown rice and drizzle with any remaining marinade.
