Description

Delightful cookies stuffed with a gooey cinnamon sugar filling that blend the flavors of traditional cinnamon rolls with the texture of soft cookies.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract

  • 1/2 teaspoon ground cinnamon
  • 1 cup cinnamon sugar filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, and salt in a bowl.
  3. Cream together softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  4. Beat in the egg and vanilla until fully incorporated.
  5. Gradually mix in the dry ingredients until a soft dough forms.
  6. Take a tablespoon of dough, flatten it, and place a spoonful of the cinnamon sugar filling in the center.
  7. Wrap the dough around the filling and roll it into a ball.
  8. Place cookie balls on a lined baking sheet.
  9. Bake for 10-12 minutes until the edges are golden brown.
  10. Allow to cool slightly before indulging.

Notes

To avoid overbaking, they may look slightly underdone when out of the oven but will continue to set as they cool.
