Description
A delicious and indulgent chocolate coconut pecan swiss roll that combines rich chocolate flavor with the crunch of pecans and the sweetness of coconut.

- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1/2 cup chopped pecans
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat the eggs and sugar until light and fluffy.
- Gradually add the dry ingredients to the egg mixture and mix until combined.
- Spread the batter evenly onto the prepared baking sheet.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let the cake cool for a few minutes, then invert it onto a clean kitchen towel dusted with powdered sugar.
- Roll the cake with the towel and let it cool completely.
- In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.
- Unroll the cooled cake, spread the whipped cream, coconut, and pecans evenly, then roll it back up.
- Chill in the refrigerator for at least 1 hour before slicing and serving.
Notes
- Make sure to use unsweetened cocoa powder for a richer flavor.
- For a more intense coconut flavor, use toasted coconut.
- This dessert can be made a day in advance and stored in the refrigerator.
