Ingredients

  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat the eggs and sugar until light and fluffy.
  4. Gradually add the dry ingredients to the egg mixture and mix until combined.
  5. Spread the batter evenly onto the prepared baking sheet.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Let the cake cool for a few minutes, then invert it onto a clean kitchen towel dusted with powdered sugar.
  8. Roll the cake with the towel and let it cool completely.
  9. In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.
  10. Unroll the cooled cake, spread the whipped cream, coconut, and pecans evenly, then roll it back up.
  11. Chill in the refrigerator for at least 1 hour before slicing and serving.
