  • 1/2 cup chicken stock (or beef stock)
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons brown sugar (or white sugar)
  • 1 tablespoon cornstarch
  • 1 head broccoli (cut into bite-size florets)
  • 1 tablespoon peanut oil (or vegetable oil)
  • 3 garlic cloves (minced)
  • 2 teaspoons ginger (minced)

Instructions

  1. Prepare the beef: Slice the beef against the grain into thin strips, about 0.5 cm (1/4 inch) in thickness. In a bowl, combine the sliced beef with soy sauce, peanut oil, and cornstarch. Let this marinate while you prepare the other ingredients.
  2. Create the sauce: In a medium bowl, whisk together the chicken stock, Shaoxing wine, soy sauce, dark soy sauce, and brown sugar.
  3. Steam the broccoli: Heat a large nonstick skillet over medium-high heat, add 1/4 cup of water, and bring to a boil. Toss in the broccoli and cover, steaming it until tender, about 1 minute.
  4. Cook the beef: In the now-dry skillet, add the peanut oil and swirl to coat. Stir-fry the marinated beef in a single layer until browned.
  5. Infuse with flavor: Add minced garlic and ginger to the pan. Stir to release the aromatic oils.
  6. Combine everything: Return the steamed broccoli to the skillet. Pour in the sauce and stir until it thickens.
  7. Serve: Transfer to a serving plate and enjoy hot.
