- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 cup elbow macaroni
- 2 cups shredded cheddar cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet and sauté until softened.
- Stir in the kidney beans, diced tomatoes, tomato sauce, beef broth, chili powder, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
- Stir in the elbow macaroni and half of the cheddar cheese.
- Transfer the mixture to a greased casserole dish and top with the remaining cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
Notes
- For a spicier version, add jalapeños or hot sauce.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- Leftovers can be stored in an airtight container for up to 3 days.
