- 2 cups cooked shredded chicken
- 8 small flour tortillas
- 1 cup sour cream
- 1 cup shredded cheese (optional)
- 1 can (10 oz) enchilada sauce
- 1/2 cup diced onion (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the chicken mixture by combining shredded chicken, sour cream, garlic powder, cumin, salt, and pepper in a mixing bowl.
- Layer the bottom of a baking dish with some enchilada sauce.
- Assemble the enchiladas by filling tortillas with the chicken mixture, rolling them up, and placing them seam-side down into the baking dish.
- Add the remaining enchilada sauce on top of the rolled tortillas, sprinkling with cheese and diced onion if desired.
- Bake for 20-25 minutes until heated through and cheese has melted.
- Serve warm and enjoy!
