Description

Delicious chicken enchiladas enveloped in warm tortillas and topped with creamy, tangy sour cream white sauce.


Ingredients

  • 2 cups cooked shredded chicken
  • 8 small flour tortillas
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)
  • 1 can (10 oz) enchilada sauce
  • 1/2 cup diced onion (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the chicken mixture by combining shredded chicken, sour cream, garlic powder, cumin, salt, and pepper in a mixing bowl.
  3. Layer the bottom of a baking dish with some enchilada sauce.
  4. Assemble the enchiladas by filling tortillas with the chicken mixture, rolling them up, and placing them seam-side down into the baking dish.
  5. Add the remaining enchilada sauce on top of the rolled tortillas, sprinkling with cheese and diced onion if desired.
  6. Bake for 20-25 minutes until heated through and cheese has melted.
  7. Serve warm and enjoy!
