- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup Alfredo sauce
- 1/4 cup chopped parsley
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, Alfredo sauce, parsley, egg, garlic powder, onion powder, salt, and pepper.
- Mix until well combined.
- Grease a muffin tin and scoop the mixture into each cup, filling them about 3/4 full.
- Bake for 25-30 minutes or until the meatloaf cups are cooked through and golden on top.
- Let cool for a few minutes before removing from the tin.
- Serve warm with additional Alfredo sauce if desired.
Notes
- For a spicier kick, add red pepper flakes to the mixture.
- These meatloaf cups can be frozen for later use.
