  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions

  1. In a skillet, heat a small amount of oil over medium heat.
  2. Add the diced onion and bell pepper, sautéing until softened.
  3. Add the ground beef, garlic powder, cumin, salt, and pepper. Cook until the beef is browned and cooked through.
  4. Remove the beef mixture from the heat and set aside.
  5. In the same skillet, place one tortilla and sprinkle half of it with cheese.
  6. Add a portion of the beef mixture on top of the cheese, then sprinkle more cheese on top.
  7. Fold the tortilla in half and cook until golden brown on both sides and the cheese is melted.
  8. Repeat with the remaining tortillas and filling.
  9. Cut into wedges and serve hot.
