- 1 lb ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 small onion, diced
- 1 bell pepper, diced
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- Cooking oil for frying
Instructions
- In a skillet, heat a small amount of oil over medium heat.
- Add the diced onion and bell pepper, sautéing until softened.
- Add the ground beef, garlic powder, cumin, salt, and pepper. Cook until the beef is browned and cooked through.
- Remove the beef mixture from the heat and set aside.
- In the same skillet, place one tortilla and sprinkle half of it with cheese.
- Add a portion of the beef mixture on top of the cheese, then sprinkle more cheese on top.
- Fold the tortilla in half and cook until golden brown on both sides and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve hot.

- Serve with salsa, sour cream, or guacamole for dipping.
