Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. Cream the softened butter, granulated sugar, and brown sugar until fluffy and light.
  4. Beat in the eggs, one at a time, then stir in the grated carrots and vanilla extract.
  5. Mix in the dry ingredients until just combined, avoiding over-mixing.
  6. Fold in the chopped nuts, if using.
