Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Cream the softened butter, granulated sugar, and brown sugar until fluffy and light.
- Beat in the eggs, one at a time, then stir in the grated carrots and vanilla extract.
- Mix in the dry ingredients until just combined, avoiding over-mixing.
- Fold in the chopped nuts, if using.
- Drop spoonfuls of cookie dough onto the prepared baking sheet.
- Bake for about 12-15 minutes or until golden around the edges.
