Ingredients

  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 8 ounces brie cheese, sliced
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and add the sliced onions.
  3. Cook the onions, stirring occasionally, until they are caramelized, about 20-25 minutes.
  4. Add balsamic vinegar, salt, and pepper to the onions and stir well.
  5. Roll out the puff pastry on a baking sheet and score a border around the edges.
  6. Spread the caramelized onions evenly over the puff pastry, staying within the scored border.
  7. Arrange the brie cheese slices on top of the onions.
  8. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
  9. Garnish with fresh thyme if desired and serve warm.
