Description

A vibrant pasta salad combining fresh cherry tomatoes, creamy mozzarella, and aromatic basil with tender tortellini, drizzled in balsamic dressing.


Ingredients

  • 8 oz cheese-filled tortellini
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls (bocconcini)
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup balsamic dressing
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions, usually about 8-10 minutes. Drain and rinse with cold water.
  2. Combine the cooled tortellini, halved cherry tomatoes, mozzarella balls, and chopped basil in a large mixing bowl.
  3. Drizzle with balsamic dressing and olive oil, then season with salt and pepper.
  4. Toss gently to coat all ingredients evenly.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Best enjoyed fresh but can be made ahead and stored in the refrigerator for up to 3 days. Avoid freezing.
