Description
A delicious and flavorful meatloaf made with chicken, fresh tomatoes, mozzarella cheese, and basil, inspired by the classic Caprese salad.

- 1 lb ground chicken
- 1 cup fresh mozzarella cheese, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk
- 1 large egg
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground chicken, mozzarella, cherry tomatoes, basil, breadcrumbs, Parmesan, milk, egg, garlic, salt, and pepper.
- Mix until well combined.
- Transfer the mixture to a loaf pan and shape it into a loaf.
- Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before slicing and serving.
Notes
- For added flavor, consider adding Italian seasoning or red pepper flakes.
- Serve with a side salad or roasted vegetables for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
