Description

Butternut Squash & Spinach Quesadillas are a delicious and healthy twist on traditional quesadillas, featuring roasted butternut squash and fresh spinach.


Ingredients

  • 1 medium butternut squash, peeled and diced
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, cumin, salt, and pepper, then spread it on a baking sheet.
  3. Roast the squash for 25-30 minutes, or until tender.
  4. In a large bowl, combine the roasted butternut squash, chopped spinach, and shredded cheese.
  5. Heat a skillet over medium heat and place one tortilla in the skillet.
  6. Add a portion of the butternut squash and spinach mixture on one half of the tortilla, then fold the other half over.
  7. Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  8. Repeat with the remaining tortillas and filling.
  9. Cut into wedges and serve warm.

Notes

  • Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
  • These quesadillas can be made ahead of time and reheated in the oven.
