Butternut Squash & Spinach Quesadillas are a delicious and healthy twist on traditional quesadillas, featuring roasted butternut squash and fresh spinach.

- 1 medium butternut squash, peeled and diced
- 2 cups fresh spinach, chopped
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced butternut squash with olive oil, cumin, salt, and pepper, then spread it on a baking sheet.
- Roast the squash for 25-30 minutes, or until tender.
- In a large bowl, combine the roasted butternut squash, chopped spinach, and shredded cheese.
- Heat a skillet over medium heat and place one tortilla in the skillet.
- Add a portion of the butternut squash and spinach mixture on one half of the tortilla, then fold the other half over.
- Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
- These quesadillas can be made ahead of time and reheated in the oven.
- Serve with salsa or guacamole for dipping.
