- 4 boneless, skinless chicken breasts
- 1 cup butternut squash, peeled and diced
- 1/4 cup fresh sage, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the diced butternut squash until tender.
- In a bowl, mix the sautéed squash, sage, cream cheese, and mozzarella until well combined.
- Cut a pocket in each chicken breast and stuff with the butternut squash mixture.
- Season the outside of the chicken breasts with salt and pepper.
- Place the stuffed chicken in a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
- Let rest for a few minutes before serving.
Notes
- For added flavor, marinate the chicken in olive oil and herbs before stuffing.
- Serve with a side of roasted vegetables or a fresh salad.
- Leftovers can be stored in the refrigerator for up to 3 days.
