Description

A delicious and savory dish featuring chicken breasts stuffed with a flavorful mixture of butternut squash and sage.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup butternut squash, peeled and diced
  • 1/4 cup fresh sage, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the diced butternut squash until tender.
  3. In a bowl, mix the sautéed squash, sage, cream cheese, and mozzarella until well combined.
  4. Cut a pocket in each chicken breast and stuff with the butternut squash mixture.
  5. Season the outside of the chicken breasts with salt and pepper.
  6. Place the stuffed chicken in a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
  7. Let rest for a few minutes before serving.

Notes

  • For added flavor, marinate the chicken in olive oil and herbs before stuffing.
  • Serve with a side of roasted vegetables or a fresh salad.
