- 4 large russet potatoes
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- 1/4 cup sour cream
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork. Bake for 45-60 minutes until tender.
- Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out some of the flesh, leaving a small border.
- Brush the potato skins with olive oil and season with salt and pepper. Place them on a baking sheet.
- In a bowl, mix the shredded chicken with buffalo sauce until well coated.
- Fill each potato skin with the buffalo chicken mixture, then top with shredded cheddar cheese.
- Bake the filled potato skins for an additional 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped green onions and a dollop of sour cream before serving.
Notes
- For a milder flavor, use a mild buffalo sauce.
- These can be made ahead of time and reheated in the oven.
- Feel free to add other toppings like blue cheese or ranch dressing.
