- 1 lb shredded cooked chicken
- 1/2 cup buffalo sauce
- 1/2 cup cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 12 baby bell peppers, halved and seeded
- 1/4 cup green onions, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese until well combined.
- Stuff each baby bell pepper half with the buffalo chicken mixture.
- Place the stuffed peppers on a baking sheet and sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
Notes
- Adjust the amount of buffalo sauce to your spice preference.
- These can be made ahead of time and stored in the refrigerator before baking.
