- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 1 egg
- 1/4 cup ketchup
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 8 taco shells
- 1 cup shredded cheese
- 1 cup lettuce, shredded
- 1/2 cup tomatoes, diced
- 1/4 cup sour cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, onion, bell pepper, egg, ketchup, garlic powder, salt, and black pepper.
- Mix until well combined and form into a loaf shape.
- Place the meatloaf in a baking dish and bake for 45-50 minutes or until cooked through.
- Once cooked, let the meatloaf cool for a few minutes before slicing it into taco-sized pieces.
- Warm the taco shells in the oven for a few minutes.
- Fill each taco shell with meatloaf pieces, then top with cheese, lettuce, tomatoes, and sour cream.
- Serve immediately and enjoy your flavorful meatloaf tacos!

- Leftover meatloaf can be stored in the refrigerator for up to 3 days.
