Description

A savory and hearty dish featuring tender pulled beef braised in beer and onions, perfect for sandwiches or served over rice.


Ingredients

  • 3 lbs beef chuck roast
  • 1 large onion, sliced
  • 2 cups beer (preferably a stout or porter)
  • 4 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season the beef chuck roast with salt, pepper, and smoked paprika.
  3. Brown the beef on all sides in the pot, then remove and set aside.
  4. Add sliced onions and garlic to the pot, sautéing until softened.
  5. Stir in brown sugar and Worcestershire sauce, cooking for another minute.
  6. Return the beef to the pot and pour in the beer.
  7. Bring to a simmer, then cover and reduce heat to low.
  8. Cook for 3-4 hours, or until the beef is tender and easily shredded.
  9. Remove the beef, shred it with two forks, and return it to the pot to soak up the juices.
  10. Serve warm on buns or over rice.

Notes

  • For a spicier kick, add a pinch of cayenne pepper.
  • This dish can be made a day ahead and reheated for better flavor.
