Description

  • ½ cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 12 tsp sriracha (adjust to taste)
  • 1 tsp honey (optional)
  • 1 clove garlic, minced
  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1 cup red cabbage, shredded
  • 2 green onions, sliced
  • Sesame seeds (optional, for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Heat the oil: In a skillet over medium heat, pour in 1 tablespoon of olive oil. Allow it to heat until shimmering.
  2. Cook the chicken: Season 1 lb of chicken with ½ teaspoon salt and ¼ teaspoon black pepper. Add to the heated skillet, letting the chicken cook until golden brown and fully cooked, about 6–8 minutes. Stir occasionally for even cooking.
  3. Prepare the Bang Bang sauce: In a small bowl, whisk together ½ cup mayonnaise, 3 tablespoons sweet chili sauce, 1–2 teaspoons sriracha, 1 teaspoon honey (if desired), and 1 clove of minced garlic until silky smooth.
  4. Combine chicken and sauce: Drizzle half of the Bang Bang sauce over the cooked chicken, tossing it to coat thoroughly. Turn off the heat.
  5. Assemble the bowls: Begin by layering 2 cups of cooked rice as the base of each bowl. Top with the saucy chicken, followed by 1 cup of shredded carrots, 1 cup of thinly sliced cucumber, 1 cup of shredded red cabbage, and 2 sliced green onions.
  6. Finish with sauce and garnish: Drizzle the remaining sauce over the bowls. Add optional garnishes such as sesame seeds and fresh cilantro.
  7. Serve immediately: Enjoy while everything is fresh and warm for the best experience!
