Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the diced sweet potatoes, balsamic vinegar, olive oil, honey or maple syrup, salt, and pepper.
- Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Bake for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Remove from the oven and garnish with fresh parsley if desired.
Notes
- For a spicier kick, add a pinch of cayenne pepper.
- These sweet potato cubes can be served warm or at room temperature.
