- 2 cups almond milk (or any milk of choice)
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup chopped nuts (optional)
- 1/2 cup raisins or dried cranberries (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, pumpkin puree, almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
- If using, fold in the chopped nuts and dried fruit.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes, or until the top is golden and the oatmeal is set.
- Let it cool for a few minutes before serving.
