Ingredients

- 1 pound Italian sausage
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 package (9 oz) cheese tortellini
- 2 cups spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned. Drain excess fat.
- Add the onion, carrots, celery, and garlic to the pot. Sauté until the vegetables are tender.
- Pour in the chicken broth and diced tomatoes. Bring to a boil.
- Add the tortellini and Italian seasoning. Cook according to package instructions until tortellini is tender.
- Stir in the spinach and cook until wilted. Season with salt and pepper to taste.
- Serve hot and enjoy!

- Feel free to add other vegetables like zucchini or bell peppers.
