Ingredients

  • 1 package (9 oz) cheese tortellini
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned. Drain excess fat.
  2. Add the onion, carrots, celery, and garlic to the pot. Sauté until the vegetables are tender.
  3. Pour in the chicken broth and diced tomatoes. Bring to a boil.
  4. Add the tortellini and Italian seasoning. Cook according to package instructions until tortellini is tender.
  5. Stir in the spinach and cook until wilted. Season with salt and pepper to taste.
