- 3 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter
- 2 medium apples, peeled and sliced
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup rolled oats
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, whisk together the eggs, flour, milk, granulated sugar, vanilla extract, and salt until smooth.
- In a large oven-safe skillet, melt the butter over medium heat.
- Add the sliced apples, brown sugar, and cinnamon to the skillet, cooking until the apples are slightly softened.
- Pour the batter over the apples in the skillet.
- Bake in the preheated oven for 20-25 minutes, or until the pancake is puffed and golden brown.
- While the pancake is baking, prepare the streusel by mixing rolled oats, chopped nuts, and a little brown sugar in a bowl.
- Once the pancake is done, remove it from the oven and sprinkle the streusel on top.
- Serve warm, dusted with powdered sugar if desired.
Notes
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- Feel free to add other fruits like pears or berries for variation.
- This pancake is best served immediately after baking.
