- 2 large sweet potatoes
- 2 medium apples, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- Salt to taste
- 1 tablespoon maple syrup (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then place them in a large bowl.
- Add the diced apples, olive oil, cinnamon, nutmeg, and salt to the bowl. Toss to combine.
- Spread the mixture evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender.
- Remove from the oven and let cool slightly.
- Transfer the roasted mixture to a large bowl and mash until smooth. Stir in maple syrup if desired.
- Serve warm as a side dish or a cozy meal.

- For a creamier texture, add a splash of milk or a dairy-free alternative while mashing.
