- 3–4 lbs pork roast
- 2 cups apple cider
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat.
- Season the pork roast with salt and pepper, then sear it in the skillet until browned on all sides.
- Remove the pork from the skillet and place it in a roasting pan.
- Add chopped onion and minced garlic to the skillet and sauté until softened.
- Pour in the apple cider and add rosemary and thyme, stirring to combine.
- Pour the apple cider mixture over the pork roast in the roasting pan.
- Cover the pan with foil and roast in the preheated oven for about 2 hours, or until the pork is tender.
- Remove the foil for the last 30 minutes of cooking to allow the roast to brown.
- Let the roast rest for 10 minutes before slicing and serving.
Notes
- For extra flavor, marinate the pork in apple cider overnight.
- Serve with roasted vegetables or mashed potatoes for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
