Ingredients

  • 1 turkey breast (about 45 pounds)
  • 4 cups apple cider
  • 1/2 cup kosher salt
  • 1/4 cup brown sugar
  • 2 tablespoons black peppercorns
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon garlic powder
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine apple cider, kosher salt, brown sugar, and black peppercorns. Heat until salt and sugar dissolve.
  2. Remove from heat and let the brine cool completely.
  3. Place the turkey breast in a large container and pour the cooled brine over it. Cover and refrigerate for at least 12 hours, preferably 24 hours.
  4. Preheat the oven to 350°F (175°C).
  5. Remove the turkey from the brine, rinse under cold water, and pat dry.
  6. In a small bowl, mix together thyme, rosemary, garlic powder, olive oil, and Dijon mustard. Rub this mixture all over the turkey breast.
  7. Place the turkey breast in a roasting pan and season with salt and pepper.
  8. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (75°C).
  9. Let the turkey rest for 15 minutes before slicing and serving.

  • For extra flavor, consider adding apple slices to the brine.
  • Make sure to monitor the turkey’s internal temperature to avoid overcooking.
