- 1 turkey breast (about 4–5 pounds)
- 4 cups apple cider
- 1/2 cup kosher salt
- 1/4 cup brown sugar
- 2 tablespoons black peppercorns
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon garlic powder
- 1/4 cup olive oil
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large pot, combine apple cider, kosher salt, brown sugar, and black peppercorns. Heat until salt and sugar dissolve.
- Remove from heat and let the brine cool completely.
- Place the turkey breast in a large container and pour the cooled brine over it. Cover and refrigerate for at least 12 hours, preferably 24 hours.
- Preheat the oven to 350°F (175°C).
- Remove the turkey from the brine, rinse under cold water, and pat dry.
- In a small bowl, mix together thyme, rosemary, garlic powder, olive oil, and Dijon mustard. Rub this mixture all over the turkey breast.
- Place the turkey breast in a roasting pan and season with salt and pepper.
- Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (75°C).
- Let the turkey rest for 15 minutes before slicing and serving.
Notes
- For extra flavor, consider adding apple slices to the brine.
- Make sure to monitor the turkey’s internal temperature to avoid overcooking.
- This recipe can be adapted for a whole turkey; just adjust the brining time accordingly.
