A delicious croissant sandwich filled with fresh arugula, creamy brie cheese, and sweet apple slices, perfect for a light lunch or snack.

- 2 Croissants
- 4 oz Brie cheese
- 1 medium apple, thinly sliced
- 1 cup fresh arugula
- 1 tbsp honey (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Slice the croissants in half horizontally.
- Spread a layer of brie cheese on the bottom half of each croissant.
- Layer the apple slices on top of the brie.
- Add a handful of fresh arugula on top of the apples.
- Drizzle honey over the arugula if desired.
- Place the top half of the croissant back on and press gently.
- Place the sandwiches on a baking sheet and warm in the oven for about 5-7 minutes.
- Remove from the oven, slice in half, and serve immediately.
Notes
- For a vegan option, substitute brie with a plant-based cheese.
- Feel free to add nuts like walnuts or pecans for extra crunch.
